Best before
There is no need to cellar this wine for the long term, as it will be best in its youth when the fruit and acidity are at their peak. The wine will drink best in the first 18 months after release (generally two full years from the vintage date - in this case September of 2022).
Serving advice
Chill a bottle (or two) and serve it right out of the fridge. The wine will warm up a bit over the course of a meal (or a glass) and reveal more citrus and melon flavor, but when cold the mineral/wet stone/sea spray character is most apparent and to me delicious. Keep a glass on hand as you shuck oysters and the sweet brine of the oysters will be enhanced by a sip and swirl of this Sauv Blanc.
Food match
Locally there is a Thai cold egg noodle salad with - you guessed it - cold egg noodles over frisse greens with avocado, soft boiled egg, grilled tofu and a sprinkling of green onions in a light, tangy dressing. I like it with a drop of hot chili paste - that is a phenomenal pairing with this wine. The chilled dish allows the wine to pair easily and the fresh greens play off the box hedge notes in the wine. Avocado is a dream with Sauv Blanc as its 'green' and nutty flavors are complementary to the acidity and nettle notes. The earthiness of the tofu plays an attractive foil to the bright fruit flavors and grounds the wine.

Unmistakably one of the North Coast’s top winemaking talents, Ondine Chattan’s worked for wine institutions – famed wineries like Ridge Vineyards, Cline Cellars, and spent decades running famed Healdsburg winery Geyser Peak.
Does Geyser Peak sound familiar? It should – it’s the long-time winemaking home of one legendary Daryl Groom – and it’s where these decades-long colleagues and friends met. They’re still close… in fact, they might collaborate on exclusive wines now and again.*wink.*
