At only 70 cases made, this is a Willamette Chardonnay you won’t want to miss. And it’s begging for a big, indulgent plate of creamy fettuccine... or halibut with lemon. Maybe both. (Just to be sure.)
Best before
Since I've held the wine for 1 year since bottling, it's well balanced now and ready to be enjoyed. That said, it has enough structure to last for years as well.
Serving advice
Chill, then remove from the fridge about 10-15 minutes before opening so that the wine warms slightly. Then simply open and enjoy! (As the wine warms up a bit, the aromatics will become more complex.)
Food match
A personal favorite is halibut cheeks in a creamy white-wine-and-lobster sauce. It's an absolute pairing delight! But really, any light pasta or seafood dish is great - and anything from ceviche to grilled chicken would work well, too.
