- This isn't a lookalike Napa Cabernet - Washington Cabernet is its own beautiful beast, full of fresh mint, ripe cherries and herbs. If you think you know Cab, just wait!
- Katy & Justin harvested fruit from three vineyards in the Wahluke Slope - the warmest region in the state - to bring you a full-bodied red with a nice bright pop.
- Like any big red, this wine gets better with time. Give it a few months if you can! But if you can't wait, we totally get it. The minute your eyes feast on this gorgeous label, resistance is futile.
Best before
Cabernet is certainly a varietal that has good age potential. We made this anticipating many people will be purchasing and consuming, so it shows nicely out of the gate - but it will age nicely for 5-7 years.
Serving advice
Decanting or opening and walking away for a while is important for the first 6mo-yr post bottling. It gets better with air.
Food match
Braised short ribs would be amazing. Slow cooking the ribs so they are tender and slip off the bone in some of the Cab, so they soak up extra flavor. Served with some garlic mashed potatoes and asparagus. I like the earthy tones asparagus can have and think it would stand up to the wine.
