Serving advice
"A little bit of air is almost always helpful in allowing a wine to open up and reveal its layers and complexity," Ondine says. "Don't serve this one too cold as doing so will mute the flavor. When served a bit on the warmer side of chilled the full range of flavors will be evident. If you prefer a racier style, then serve right out of the refrigerator and the chill will mute the richer flavors and oak influence."

For an ideal pairing to bring out the full range of flavors in this Chardonnay, try goat cheese fritters served with blistered cherry tomatoes, smoked paprika and lavender honey, alongside an arugula and endive salad with avocado, Manchego cheese and toasted almonds. She explains: "The earthy goat cheese, sweet acidity of the tomatoes, smokiness of the paprika and floral elements of the lavender honey will complement the fruit notes while the spicy arugula and bitter endive tamed by creamy avocado and nutty Manchego will enhance the yeasty and nutty notes (as will the toasted almonds)."
