About the wine
This bold, barrel-aged red blend is an Ondine specialty from the heart of Mendocino
- Ondine’s plush red blend is a refined, robust medley of tart, brambly raspberry and ripe blueberry, with a backdrop of earthiness and light, soft pinch of toasty spice thanks to 11 months of aging in French oak barrels.
- Your support gave Ondine access to a mix of Syrah, Petite Sirah and a bit of Grenache from high-end vineyards spread throughout Mendocino, so she set out to capture the wide cast of flavors these impeccable grapes can offer from the region’s unique microclimates and bring them all together in one exquisite red blend just for you.
- Ondine’s an expert at crafting this type of Rhône-style red blend, having made similar wines for legendary California wineries like Ridge Vineyards. Now your funding is helping her use that expertise to bring you a truly decadent red blend from the North Coast vineyards she knows better than anyone.
Best before
The plush structure of Syrah makes this red blend enjoyable in its youth and when rounded out with the floral components of Grenache and the spice of Petite Sirah, this wine will be vibrant and energetic from the first sip to the last. When left to age for a year or longer, the fruit will mellow and the spice and earth components will become more evident. Time will help to soften the tannins and further round out the mouthfeel. If enjoyed while young, it will pair well with firm cheeses or those with the delightful crunch of calcium lactate crystals. If left to age, it will sip well with meals focused on umami flavors from mushroom to pork to cumin-seasoned tofu. If enjoyed in its youth, some aeration through a vinturi or decanter is advisable.
Serving advice
For best enjoyment, open 20 to 30 minutes prior to serving. In the first six months after release, using a Vinturi device to aerate the wine or decanting will also help to open up the wine and reveal the fruit. I personally really enjoy red wines after they have been opened for a day, so if time and circumstances permit, enjoying half the bottle the first night and saving the rest for the following day is a fun way to see how the wine evolves.
Food match
There is a local dish in Healdsburg that is a hearty take on Salade Nicoise featuring medallions of pepper-crusted ahi, chick peas, egg, sourdough croutons, romaine, and herbs de provence that will pair beautifully with this wine. For those who prefer a heavier meal, Ossobuco is a classic pairing.

Unmistakably one of the North Coast’s top winemaking talents, Ondine Chattan’s worked for wine institutions – famed wineries like Ridge Vineyards, Cline Cellars, and spent decades running famed Healdsburg winery Geyser Peak.
Does Geyser Peak sound familiar? It should – it’s the long-time winemaking home of one legendary Daryl Groom – and it’s where these decades-long colleagues and friends met. They’re still close… in fact, they might collaborate on exclusive wines now and again.*wink.*
Ondine is awestruck by the wine community Angels have built – and she wants to help it grow. “I truly connect to people through the wines I make,” she said. “The stories of the growers, the vineyards, and the process behind the wine are as vital to me as grapes.”
