Update: September 22, 2016: I saved a bottle for my birthday, which I celebrated one day late. And I didn't share. In the glass it shows a hint of pink. On the nose I found a floral apricot, and in the mouth, it retains the amazing peach flavor I loved upon release but seems softer, and the yeast flavor has almost completely integrated. It paired beautifully with my entire breakfast, but most especially the bacon and the caramel coffee cake that I indulged in! I can hardly wait until you bring us more this year, Wayne! Thank you for making such a treat for us!! Original review (November 2015): Wonderfully lush sparkling wine. What a beautiful treat this is: full of peach and apricot with a hint of yeast and lovely tiny bubbles. I could sip this all day! I love how soft it feels in the mouth. I started cooking for Thanksgiving early in the morning and decided to finally have some breakfast around 10:45. I popped open the Eponina Lush, poured myself a glass, and cooked some curried scrambled eggs, then sat down to enjoy my breakfast. I don't think I could have paired this better! The softness of the eggs enhanced the softness of the wine, and the Indian curry spices made the stone fruit flavors explode in the mouth. Soft, fruity, and light. It's possibly the best sparkling wine I've ever tasted! Thank you Wayne for a delicious Thanksgiving treat!
