This Cabernet has all the attributes for aging: great depth, ripe tannins, and good refreshing acidity. It keeps getting better! The primary fruits (cherries, blueberries) will become more complex with time.

Open 30 minutes before enjoying. With more time, the flavors show up so much more!

With this wine, I love to serve mushroom barley risotto with goat cheese and crisp, fried sage. The risotto's full mouthfeel with creamy cheese is just an ideal combination for this wine.
