Best before
Well since we are releasing this wine young it is going to change and evolve, no reason to think it won't last for 7-10 years. We tend to drink our wines on the young side, 4-7 years old. This is made in a style to hopefully enjoy now. Try and taste that bright youthfulness in the wine, the cherry and spice. Enjoy it for what it is, we aren't trying to make a wine to lay down, we want you to drink this now and be excited to see what the next vintage has to offer.
Serving advice
I always pour a small taste in the glass to make sure the wine isn't spoiled. If that first smell is good I like to top the glass off a little and give it a swirl. Take a nice smell and then taste the wine. It's hard for me not to take a technical approach on the first sip and swish it around the mouth to try and see how it tastes. This wine will probably change quite a bit with decanting. It will bring out more fruit aromas. If you don't want to decant or wait an hour after opening try and see if you can tell how it changes from glass to glass.
Food match
I'm a Cab and steak kind of guy. Give me a nice T-Bone on the grill and a glass of this beauty. Maybe some nice asparagus would even work, seasoned and grilled up next to the beef.
