Best before
This is a cool climate, leaner style of Chardonnay that will not benefit from extended aging. The fruit will remain fresh and bright for the first couple of years but long-term cellaring will bring on more caramel and baked fruit notes. It would be best enjoyed in the near term.
Serving advice
Chill the wine to refrigerator temperature and take out to rest on the counter about 15 minutes prior to serving (until the bottle develops a little condensation). This will help liberate the aromatics (fridge temp is usually a little too cold for optimal enjoyment) but still taste bright and refreshing.
Food match
The tangy and grilled flavors of lemongrass chicken will pair beautifully with the leaner structure of this wine. Another great option would be a tuna crudo with a little shoyu to bring out the citrus elements in the wine.
For dessert, an apricot nectarine crisp with a wafer of toffee crisp.
