Best before
This wine is drinking beautifully right now. There is no need or reward for extended cellaring. A little bit of time in the bottle has developed a lovely bottle bouquet and this is ready for immediate enjoyment.
Serving advice
Serve this wine chilled but not too cold. Pulling it out of the cooler about 15 minutes before serving will give the wine a chance to warm up a bit and reveal the array of melon and tropical fruit that the Dry Creek Valley imbues in its grapes. There's no need to let it air out and breathe, but serving too cold will disguise some of the character.
Food match
Edamame dumplings with a touch of sesame oil and sea salt make for a beautiful pairing. I enjoy 'ripe' green flavors with Sauvignon Blanc, as they tend to meld with the inherent fresh notes of the grape and play well off the more tropical characters. Other great pairings include crab and oysters (small and sweet like Kumamoto) or pea shoot salad with shaved ginger.
