Best before
Pinot Noir from cool climates can be very rewarding with aging of 4 or more years but do note that over the course of such aging the fruit will become more subdued and the earthier notes will rise to prominence. If you prefer the juicy fruit and back notes of leather and earth then I recommend enjoying this wine in the first 3 years after release when the fruit is still fresh and lively and all the components are in best balance. If you are adventurous get a few bottles and drink one in the near-term, another in the mid-term and the last after several years to see the evolution first hand.
Serving advice
Pinot can sometimes have a little bit of reduction on the nose immediately after opening so I recommend opening for at least 10 minutes prior to serving or pouring directly into a large-bowled glass and swirling to aerate and volatilize the esters. After shipping/receiving I would wait a few days before serving just to ensure the wine hasn't been adversely affected in the shipping process. Most wines aren't too finicky but Pinot Noir can be a bit extra-sensitive.
Food match
Peppered seared Ahi on a bed of buckwheat noodles and greens with tangy shoyu sauce, chilled edamame, and soy-glazed wonton crisps is an ideal match for this wine. The tender sweetness of the Tuna, spice of the pepper, earthiness of the noodles and soybeans, tanginess of the shoyu and saltiness of the wontons creates a great opportunity for the many dimensions of this wine to shine. The delicacy of these flavors ensures that they will not overwhelm the wine and the layers are complementary and enticing.

Unmistakably one of the North Coast’s top winemaking talents, Ondine Chattan’s worked for wine institutions – famed wineries like Ridge Vineyards, Cline Cellars, and spent decades running famed Healdsburg winery Geyser Peak.
Does Geyser Peak sound familiar? It should – it’s the long-time winemaking home of one legendary Daryl Groom – and it’s where these decades-long colleagues and friends met. They’re still close… in fact, they might collaborate on exclusive wines now and again.*wink.*
