Best before
"This wine can be enjoyed now," Sam says, "but some will find the tannins too firm as a youngster, so if possible, leave it a year or so to let some of this tannin polymerise and become softer. It depends on personal taste, but I'll be most excited drinking the Cabernet when it's 5-7 years old."
Serving advice
Serve this Cabernet at 60-64ºF. Sam says, "In truth I would open the bottle and get straight into it, but if you have the time and patience it will open up a little if left to breathe for an hour or two."
Food match
This is a pretty versatile red, and would go well with a wide range of red meats, and hard cheese. "To pick just one dish, I'd go for roast lamb," Sam says. "The protein in the meat will make the tannin feel softer. And along with the blackcurrant primary aroma is a slight herbal note typical of Cabernet, and this will be a complementary flavor like the sprig of rosemary Mum sometimes puts with roast lamb. Delicious!"
