Tim's secret to making super-smooth Pinot is playing rock 'n' roll to his grapes while they ferment (seriously!)
- This Pinot Noir is classic. It's full of all the cherry and wild strawberry aromas you could want.. and a scrumptiously long finish.
- Tim used to sell his wines for $35-$45 bucks - but that was before you gave him wings. Now he makes the same beautiful Pinot without any of the wasted marketing and sales costs!
- Tim makes this Pinot with a bit more zip so that it can pair perfectly with dishes like salmon – but that also means it can taste a bit lean if you're sipping it on its own. This is the perfect meal companion!
Best before
I look for balance in my wines. They need acidity in order to pair with food and age properly. My wines age easily for 8 to 15 years, sometimes longer. They drink well young although I recommend a good decanting when consuming the wine if it's under five years old.

Food match
If I'm in the seafood mood, Salmon is always a great match with Pinot Noir. If it's meat, I tend to like lamb with Pinot. A simple salad and some crusty sourdough bread rounds out a great simple meal.
