The old vines of this rolling vineyard naturally produce lower yields, meaning each grape is packed with intense, deeply concentrated flavors.
- This Cabernet is built to age gracefully for decades, and with 6 years of aging already, the flavors have just begun to take on a bit more complexity and depth. Pro tip: stock up on several bottles and enjoy them over the next few years as the flavors continue to evolve.
Best before
This wine will age for another 20-30 years at least, and is just starting to show signs of maturation now.
Serving advice
As wine ages, we find that sometimes the cork gets brittle. Make sure that the screw you are using goes all the way through the cork. If you put it in part way, the cork might break upon extraction. It is always best to use a corkscrew with a two-part hinge (double-hinged waiter corkscrew), or a two-prong style (like a Monopol Ah-so) on mature wines or longer corks. Angels should invest in both of these. Lastly, I am not a fan of decanting. The wine changes rapidly when exposed to air for the first time in 6 years. I'd personally rather experience the changes happening in my glass than letting them happen on their own in a decanter.
Food match
Honestly anything. I am not a huge meat-eater, and find this wine goes great with fish, roasted vegetables, Italian dishes and even on its own. Always choose the wine you want to drink regardless of the menu.
