It's beautiful and fresh now, but because of the remarkable concentration and depth of flavors, this wine has great aging potential. When it's young, the beautiful lime flavors keep this wine fruity and fresh. As it ages, the fruit gets richer and more complex.
Serving advice
SB must be enjoyed cold, but not ice cold. It's too cold if the beautiful aromas and flavors are hidden. I love enjoying this wine slightly chilled, when most of the true flavors come to the fore.
Food match
I prepare a beautiful fresh pesto from homegrown basil and cilantro. It also pairs well with freshly-made Tagliatelle pasta with pine nuts.
