Best before
If you're patient (or can put a few bottles aside), this wine will age beautifully for the next 5 - 10 years. However, if youre as impatient as I am and choose to drink it right away, please be sure to decant the wine, in order to let it "breathe" properly. It will bring out all the wonderful dark fruit aromas and help it develop a softer texture.
Serving advice
This is a bold Cabernet Sauvignon. Therefore, please be sure to open your bottle at least 1 hour before enjoying it. I advise the Angels to pour a glass when they open the bottle, and to smell it and taste it as it sits on the glass. It is fascinating to see how the wine opens up, how the beautiful dark fruit really comes through as the Cab gradually get smoother.
Food match
This 2019 vintage has a great depth of fruit, and therefore I believe would pair beautifully with an herb-crusted beef loin or a rack of lamb. A nice plate of strong cheeses (think blue cheese or aged cheddar) will also be a great accompaniment for this wine. And be sure not to forget the serrano ham! If you're looking for a vegetarian pairing, I would go with mushroom risotto or a spicy vegetarian pizza.
