Best before
It is a beautiful style to drink now however it will certainly reward, and be at its optimum with 5 - 8 years of cellaring.
Serving advice
This wine is still very much a baby and needs proper breathing time before serving. Ideally it should be decantered for at least an hour before serving, but not everyone has a decanter - or wants to wait an hour, so just open it up and give it as much time as you can - but be sure to give it a decent swirl in your glass as well. Get as much air into it as possible. This will help to soften the young tannins, smooth out the palate and bring it all back into balance - or better still, put it away for a few years. Time is most definitely going to help this wine develop and soften into a rich, earthy, complex red that will certainly reward
Food match
This wine is most definitely at its best with food. Red meat, slow roasted with a hint of spice/heat is the ideal match. Think chilli con carne, beef tacos, spicy meatballs with spaghetti, or even a simple pasta bolognaise or char-grilled steak will do the trick.

- Boy (Adrian) meets Girl (Rebecca) are a young couple, both passionate about wine. Adrian is the winemaker extraordinaire with over 15 years experience & Rebecca, the marketer extraordinaire, both live, breathe and love wine!
- For over 10 years, their dream was to one day make their own wine - fast forward to the present and they're now finally living that dream thanks to a kickstart from Angels. These days, they own and operate Santolin winery and make loads of wines for Angels in Australia.
- Taking a more European-styled approach to their stunning Yarra Valley wines, they love making anything a little funky, a little left of field and a little bit creative.
