This is a wine to drink within a year so the fruit flavors are fresh.
Serving advice
Never point the cork at anybody while opening. Once the wire hood is unwound, always keep your hand on the cork. If the cork breaks during opening, never use a cork screw as this may cause the bottle to explode. Saber opening at your own risk. Safety glasses are a must.
Food match
Sparkling wines can go with a variety of food because they are lower in alcohol, have less oak, and have an assertive acidity. For breakfast, make a mimosa and enjoy with an omelet and a slice of melon. A snack? Potato chips work, as the salt and acidity of the bubbly work together. For lunch, perhaps try a nice veggie salad with goat cheese. For dinner, sparkling goes will with fish and the "white" meat of chicken.

Rob’s had a hand in Napa’s sparkling wine game since its infancy, getting his boots wet at Chappellet and Schramsberg and later leading teams for Scharffenberger, Piper-Sonoma and Mumm. That's quite the pedigree!
Thanks to you, this seasoned sparkling professional has a new mission – to make elegant, esteemed bubbly more accessible to all!
