There has been a thought floating in my head every evening when I eat dinner. The place that wine plays in a meal. I did not web search what others would consider this nectar of the gods and how it fits into a meal and I did not actively consider it. Instead I let my soul do the deciphering and placing of where wine fits in a meal when properly paired. It is not a beverage one sips to enhance the meal, No. Is asparagus a vegetable you add to enhance a meal? Or sauted mushrooms with your steak? No. Wine is nothing more nor less than an additional course to the symphony that we wish we could all achieve at every meal. Tonight I opened a bottle of 2015 BX even though I have a bottle of 99 Barrels Pinot open. It just seemed to be the right time. I like to open a wine and test it without alteration (aerating or decanting) on the first sip. When first opened I smelled Earthy Cave and mushrooms, to me a sign of a wine I am going to go head over teakettle for. Color is dark garnet and when first poured into a glass I smelled Black Cherry and Plumbs. My first sip had even tannins and a medium to long finish with Dark Cherry and Tannins. Not surprising considering this wine is young and I had not been aerated or decanted. So I decanted a glass and sipped 99 Barrels Pinot while making my NY Sirloin and homemade potato chips (using purple meat potatoes). This full bodied wine with it's mouth full of flavor was the absolutely perfect combination with my dinner. The silky smooth sipping that I get from the older brother (2014 BX) is present when paired with a good heavy meal that puts the tannins in their place. I could not be happier, well okay I could be happier, it could be 6 months from now or 3 years from now when this wine will drink smoothly straight out of the bottle. But then that is what decanting an aerators are for. LOVE ME MY BX!!!!!!!
